My prayer was answered. We had a dry Saturday last weekend. I spent the whole day working in the garden, winterizing the house, sweeping the deck, fixing some loose woodwork, ... I worked well into the dark as I was afraid that there may not be another dry weekend for awhile. By the time I crawled back into the house, it was past 9p. I was freezing cold, exhausted, and starving. I needed something hot, soothing, ... I needed some pampering. A hot and heavy, yet easy-to-make, soup sounded like a good remedy. I always keep some canned vegetable in my pantry for "emergencies", like this. I tried the following recipe before. It was simple and very satisfying. It was just what I needed for a easy evening. Puree tomatoes and beans in a food processor or blender. Heat the puree mixture on low in a 4-quart saucepan. Stir in soy milk and salt. Simmer, but do not bring to a boil. Garnish with fresh chopped chives. While the soup was simmering, I made a toast with butter and a sprinkle of garlic powder. In just a few minutes, dinner was ready.
