Creamy Tomato Soup to Warm Your Heart

menu_1111bProcrastination is human nature, and I am only human! Every year when Halloween comes around, I have to pray for a few dry weekends so that I can finish some outdoor projects before the rain starts. It is just inappropriate to finish these things ahead of time.

My prayer was answered. We had a dry Saturday last weekend. I spent the whole day working in the garden, winterizing the house, sweeping the deck, fixing some loose woodwork, ...  I worked well into the dark as I was afraid that there may not be another dry weekend for awhile. By the time I crawled back into the house, it was past 9p. I was freezing cold, exhausted, and starving. I needed something hot, soothing, ... I needed some pampering.

A hot and heavy, yet easy-to-make, soup sounded like a good remedy. I always keep some canned vegetable in my pantry for "emergencies", like this. I tried the following recipe before. It was simple and very satisfying. It was just what I needed for a easy evening.

Creamy Tomato Soup Recipe

Serves 6

  • 2 (14 oz) cans diced tomatos
  • 1 (12 oz) navy beans
  • ½ c soy beverage, original flavor
  • 1/s tsp sea salt

Puree tomatoes and beans in a food processor or blender. Heat the puree mixture on low in a 4-quart saucepan. Stir in soy milk and salt. Simmer, but do not bring to a boil. Garnish with fresh chopped chives.

While the soup was simmering, I made a toast with butter and a sprinkle of garlic powder. In just a few minutes, dinner was ready. It was a perfect pick-me-up in a chilly evening.
