The neon bison sign out front was enough to spark my curiosity, and the explanation is simple: This tiny place near Point Defiance serves a lot of bison meat (and it's organically raised, too). They make tacos, burritos, burgers, sausages and soups with this extremely low-fat meat (they call it "the world's original health food"), accompanied by a full menu of vegetarian options and yogurt-based shakes. The shop is ideally located for grabbing a snack before spending a warm afternoon in the park.
